Learn How to Make Tahini Paste at Home

Understanding Tahini: What It Is and Why You Might Make It

Tahini is a paste made from ground sesame seeds. It's a staple ingredient in Middle Eastern, Mediterranean, and North African cuisines. The word "tahini" comes from the Arabic word "tahana," which means "to grind." Making tahini at home allows you to control the ingredients, freshness, and flavor profile of the final product.

Store-bought tahini can cost between $8 and $15 per jar, depending on the brand and quality. When you make tahini at home, the primary cost is purchasing raw sesame seeds. A pound of sesame seeds typically costs $4 to $8 and yields approximately 16 ounces of tahini paste. This means homemade tahini can cost roughly half the price of commercial versions.

Tahini contains approximately 16 grams of protein per 3-tablespoon serving, along with healthy fats, fiber, and minerals like copper, magnesium, and zinc. It's used as a base for hummus, a drizzle for roasted vegetables, a component in baked goods, and a creamy addition to dressings and sauces. Understanding what tahini is helps you recognize its potential uses throughout your kitchen.

The homemade version differs from store-bought tahini in several ways. Commercial tahini often includes additives, preservatives, or oils to maintain consistency. Homemade tahini contains only sesame seeds—nothing else—making it a pure product. Additionally, freshly made tahini has a more vibrant sesame flavor compared to older store-bought versions that may have been sitting on shelves for months.

Practical Takeaway: Research the price of sesame seeds at local grocery stores, bulk food suppliers, and online retailers. Comparing prices helps you determine whether making tahini at home aligns with your budget and cooking habits.

Selecting and Preparing Your Sesame Seeds

The quality of your tahini depends almost entirely on the quality of the sesame seeds you use. You'll find two primary types of sesame seeds available: white (hulled) and black (unhulled). White sesame seeds have had their outer shell removed, resulting in a lighter color and milder flavor. Black sesame seeds retain their hull, offering a more robust, nutty taste and darker appearance. Most traditional tahini uses white sesame seeds, though some producers blend both varieties for complexity.

When shopping for sesame seeds, look for seeds that appear uniform in color and size. Avoid seeds that look shriveled, discolored, or dusty. The seeds should have a pleasant, slightly nutty aroma—not a rancid or stale smell. Purchase from sources with good turnover, such as bulk food sections in grocery stores or specialty retailers. Seeds stored in transparent containers that have been exposed to light for extended periods may have diminished quality. Consider buying from suppliers who can tell you when the seeds were packaged or harvested.

Before making tahini, you should clean your sesame seeds. Place them in a fine-mesh strainer and rinse under cool running water. Gently rub the seeds between your fingers while rinsing to remove any dust or debris. After rinsing, spread the seeds on a clean kitchen towel or paper towels to air-dry for 30 minutes to an hour. The seeds need to be completely dry before processing, as moisture can interfere with the grinding process and may cause the paste to become grainy or separated.

For roasting, which is an optional but recommended step, use a heavy-bottomed skillet or baking sheet. If using a skillet, heat it over medium heat and add your dried sesame seeds in a single layer. Stir continuously for 5 to 8 minutes until the seeds become fragrant and turn a light golden-brown color. If using a baking sheet, spread seeds in a single layer and roast in a 325°F oven for 10 to 15 minutes, stirring halfway through. Roasting develops deeper, more complex flavors in the tahini. This step isn't required, but it produces a more flavorful final product. Allow roasted seeds to cool to room temperature before grinding.

Practical Takeaway: Purchase a small quantity of sesame seeds first—perhaps a quarter pound—to test quality and flavor before buying in bulk. Store purchased seeds in an airtight container in your refrigerator or freezer to maintain freshness for up to six months.

Equipment Needed for Making Tahini at Home

Creating tahini requires specific equipment that can handle the grinding process. The primary tool you'll need is a food processor. A standard food processor with a capacity of 7 to 14 cups works well for most home batches. High-powered blenders like a Vitamix or Ninja can also grind tahini, though they're designed for liquids and may work less efficiently with seeds. Avoid using a coffee grinder or spice grinder—while these devices can initially chop seeds, they typically don't have enough power or capacity to grind seeds into a smooth, creamy paste.

When selecting a food processor, consider one with at least 600 watts of power. Lower-wattage models may struggle with the dense texture of sesame seeds. Some people find that food processors with pulse functions give them better control over the grinding process, though a standard continuous function also works. The blade inside the food processor should be sharp and in good condition; dull blades don't grind seeds effectively.

Beyond the food processor, you'll benefit from having several additional items. A kitchen scale helps you measure sesame seeds accurately—typically, you'll use 2 cups of seeds (about 280 grams) to produce roughly 1 cup of tahini. Measuring cups and spoons allow you to portion ingredients precisely. A rubber spatula becomes essential for scraping down the sides of the food processor bowl, pushing seeds back toward the blade as they grind. Use a silicone spatula rather than plastic, as the friction from grinding can heat the processor and potentially warp plastic tools.

You'll also need containers for storage. Glass jars with tight-fitting lids work best for storing finished tahini. Avoid plastic containers, as sesame oil can degrade certain plastics over time. A fine-mesh strainer helps with rinsing seeds before processing. A kitchen towel or cheesecloth aids in drying seeds after rinsing. Having paper towels nearby helps manage any oil that separates during grinding. While not essential, a meat thermometer allows you to monitor the temperature inside the food processor, ensuring the seeds don't overheat during processing.

Practical Takeaway: Before making your first batch, test your food processor with a small amount of seeds to verify it has adequate power and capacity. This test run prevents wasting a full batch if your equipment isn't suitable for the task.

The Step-by-Step Grinding Process

Once your sesame seeds are prepared and your equipment is ready, the actual grinding process begins. Add your cleaned and dried seeds to the food processor bowl. Start with 2 cups of seeds, which should yield approximately 1 cup of tahini paste. This quantity is manageable for most home food processors and produces enough tahini for several weeks of use. If your food processor is small, work in smaller batches—grinding 1 cup of seeds at a time—rather than overloading the machine.

Turn on the food processor and let it run continuously. Within the first 2 to 3 minutes, the seeds will break apart into smaller pieces that resemble coarse breadcrumbs. The machine will vibrate as the seeds tumble against the blade. This is normal. Continue processing without interruption. Around the 5-minute mark, the seeds will begin releasing their natural oils, and the mixture will start to clump together into a ball. This is a critical stage—don't stop processing yet.

Between the 5 and 10-minute marks, the tahini will transition from a crumbly mixture to a thick paste. During this phase, use your rubber spatula to scrape down the sides of the bowl every 1 to 2 minutes. Push the mixture from the sides back toward the center where the blade can process it. This scraping step is crucial because seeds accumulate on the bowl's sides and won't grind unless you redirect them. If you skip this step, you'll end up with an inconsistent mixture containing both fine paste and larger seed particles.
